Goats cheese, butternut squash, red onion and za'atar pizza
1 Butternut Squash, peeled and cubed
1/2 bulb garlic
1/2 red onion, finely sliced
Goats cheese (as much as you'd like per pizza)
400g plain flour
7g instant yeast
1 tsp sugar
200 ml Tomato Passata
Peel and chop a butternut squash into cubes. Coat in salt and olive oil. Add half a bulb of garlic skin on.
Roast @ 200 for 20. Mix it all up and cook for another 20.
For the dough: mix 400g flour, 7g yeast, 1tsp sugar, 1 tsp salt. Mix and make a well – add 2 tbsp olive oil and 200ml water.
Bring together then knead until elastic.
Gently fry finely sliced red onion over a medium heat. Add a few pinches of sugar and balsamic to caramelise them.
Roll out your base and add an even layer of reduced passata.
Add the toppings. Cook for 10 mins @ 240.
