Gooey stove top Mac n’ Cheese served with Rose Harissa
Indulgent, warming and creamy, this Mac and cheese is everything you want from a weeknight dish.

Ingredients
For the Mac n' Cheese
2 tbsp butter
2 tbsp flour
400ml whole milk
2 tsp salt
300g macaroni
140g cheddar
1 slice American Cheese
1 1/2 tbsp Rose Harissa

Melt 2 tbsp butter over medium heat, add 2 tbsp flour and combine to make a roux.
Cook for 2 mins on a medium low heat.
Whisk in 100ml milk until its thickened.
Add 100ml more milk and repeat the process until you’ve added 400ml’s milk in total.
Once velvety add 200 ml’s water and 2 tsp salt.
Add 300g Macaroni – cook in the sauce according to packed instructions.
Once the pasta is cooked remove from heat, add 70g grated cheddar and mix in.
Once melted add 1 slice American cheese (optional, makes it extra gooey), followed by another 70g cheddar.
Once melted add 1 ½ tbsp Rose Harissa and a few cracks of black pepper.
Add toppings of choice: I use sweetcorn, it goes particularly well with the Harissa!
